At this event, our expert speakers will share how the closed-loop approach works in action at The Farm:

  • Darren Robertson, Founder & Director of the award-winning Three Blue Ducks, will share how the restaurant’s zero-waste philosophy transforms food scraps into compost, creating a full circle from farm to table and back again.

  • Katerina Lazareva, Founder of Byron Fermentary & All Things Cultured, will delve into the art of food preservation, showing how fermentation can become a part of self-sufficient zero-waste, regenerative, closed loop food system.

  • Ryan Severn, manager of Farm Development & Sustainability at The Farm will explain how he transforms organic wastes into nutrient-dense compost, ensuring that natural resources are cycled within the farm’s ecosystem.
